Mother’s Day is TOMORROW! Are you ready? If you aren’t prepared, today is the day to do your last minute present shopping and menu planning for a brunch if you are hosting your lovely ladies. Today’s recipes are easy and incorporate store bought items, but the final menu will impress your mother (or grandmother or aunt or the woman you are celebrating tomorrow!). I hope you consider serving all or a few of these recipes to your special lady.
APPLE-CHERRY CREPE PURSE:
2 Kontos French-Style Traditional Crepes
3 Granny Smith apples, cubed and stewed with a dash of cinnamon
2 cans of cherry pie filling
½ teaspoon of butter
Navel orange peel
¼ cup confectioner’s sugar
Mint leaves for garnish
Cut the apples into small cubes, stew lightly with a dash of cinnamon
Drain stewed apples, mix with one can of cherry pie filling
Warm the mixture in a saucepan or in the microwave
Open your second can of cherry pie filling and lift out cherries. Set the cherries aside for garnish
Cut a thin orange peel strip from your navel orange peel – making the strip as long as possible – set aside
Warm your Kontos French-style crepes in a lightly buttered skillet for one minute each side
Lay each crepe flat. Arrange apple-cherry filling in center of crepe and bring up edges of crepe to center
Pick up edges of crepe, twist gently to enclose filling
Tie the orange peel strip around the crepe to form a purse
Sprinkle with powdered sugar; garnish with four or five cherries and mint leaves.
Note: Double or triple the recipe for larger parties. For an extra-special treat, try drizzling with caramel sauce or top with a dollop of whipped cream.

BACON EGG CUPS:
6 pieces of bacon
3-4 eggs, depending on size
2 TBSP Shredded Cheese
4 Tortillas
Cooking Spray
Black Pepper, Salt, Garlic Salt, and Onion Powder (1/2 TSP Each)
Preheat oven to 375
Using a round cookie cutter or bowl, cut tortillas to just fit into cupcake/muffin tin
Spray 4 cupcake/muffin cups and place cut tortilla in each
Cut each bacon strip into thirds
Place four pieces of bacon along the sides of the tortilla (the pieces will overflow onto the pan. also do not use two pieces of bacon and overlap them on the bottom of the cup–the bacon will not cook through!)
Crack eggs into bowl or measuring cup
Add spices and cheese and whisk until combined
Pour an even amount of egg into each tin
Put cupcake/muffin tin on rimmed cookie sheet (in case bacon drips)
Bake in oven for 20 minutes or until egg is cooked through and bacon is crispy
Let cool and remove from pan
NUTELLA AND FRUIT WAFFLE BITES:
1-2 Waffles (store bought or frozen waffles. I find that the waffles with the larger pattern works better)
Fruit of your choice (or mom’s choice!!)
Cut waffle into squares
Fill each hole with desired amount of Nutella
Top with fruit of choice
Place a toothpick in each waffle bite, for ease of pick up
