With most of LA either already in the desert or on their way to Coachella, I am rounding out Coachella week with another healthy, yet delicious recipe in case there are any stragglers or for the NOchella crowd. Today’s recipe is a yummy zoodle shrimp scampi…shrimp scampi with zucchini noodles, using a spiral slicer (my new favorite kitchen tool!) Follow there recipe below!
1/2 Pound Peeled and deveined shrimp
2 TBSP butter
1/4 Cup White Wine
1 Large Zuchinni, made into zoodles
Juice of 1/2 Lemon
1 TBSP Lemon Zest
1 Clove Garlic, minced
Salt and Pepper
EVOO
Parmesan Cheese to garnish
Lay shrimp on plate and pat dry on either side
Season each side of shrimp with salt and pepper
Heat saute pan over medium-high heat
Place zoodles in a microwave safe dish and microwave for 2 minutes
Add shrimp to saute pan to brown for 1 minute, then flip to brown on other side
Remove shrimp from pan and add white wine, lemon juice, garlic, salt, and pepper and bring to simmer
Turn heat down to low and continue until alcohol has cooked out of sauce, approximately 5 minutes
Add shrimp to pan
Add zoodles to pan and stir until zoodles are coated with sauce
Serve and garnish with Parmesan Cheese
