Salmon Cakes

 Can you believe it is Friday again?!  Where is this year going?!  I’m excited because my mom arrives today for some girl time and some fun!  We are going to be dining at some great places, and I can’t wait to tell you all about them.  But first, here is one of my favorite recipes, salmon cakes.  Last month when I went home, my mom asked me what I wanted for dinner one night of the nights I was home because she knew these salmon cakes would be requested for the other!  Follow the recipe below and hope you enjoy!

1 Can (14.75 ounces) Cooked Salmon

Juice of 1 Lemon

1 Egg

1 Cup Soft Breadcrumbs 

2 TBSP Worcestershire Sauce

Salt and Pepper

EVOO or cooking spray

Open salmon can and clean, take out skin and bones, and break apart into bowl 

Combine all ingredients minus EVOO in bowl and mix together 

Put plastic wrap over bowl and chill for at least 30 minutes

After chilled, take mixture out and with wet hands form even patties

In a sauté pan over medium heat on the stove, add EVOO

Once pan is hot, add salmon cakes and cook until brown on one side (about 5 minutes)

Flip and brown on other side, about another 4 minutes

Remove from pan and serve with side of choice!
