I feel that the new year has brought a few new veggie and veggie product trends: kalettes (read about them HERE), everything cauliflower, and spiralizers. Today we are going to talk about spiralizers or a spiral slicer. This is a kitchen product that takes veggies and turns them into “noodles”. Some of the best veggies for the spiralizer or spiral slicer are zucchini, squash, beets, onions, carrots, and potatoes. Ever since receiving my spiral slicer, I can’t stop making recipes using the product. My favorite veggie to use is zucchini. Here is the first recipe I made with my spiral slicer!
Zucchini
Ground Meat
Mushrooms
Kale
Tomato Sauce (amount depends on how much sauce you prefer)
Salt, Pepper, and Cayenne Pepper
Coconut Oil
Feta Cheese
Olives (optional, for garnish)
Add 2 TBSP coconut oil to a skillet on medium-high heat
Once coconut oil is melted, add ground meat and cook until brown
Remove meat from skillet and place in bowl (strain if there is a lot of juices)
Melt 2 TBSP coconut oil to skillet, add mushrooms, and season with salt and pepper
Once mushrooms are tender, add meat to skillet, and tomato sauce
Season with salt, pepper, and cayenne pepper to taste
While this mixture is heating, spiralize zucchini into zoodles
Zoodles!
Heat zoodles in oven safe dish in microwave for two minutes
Add kale to mixture on stove and stir to combine
Plate zoodles and spoon mixture over zoodles
Top with feta cheese and olives, serve, and enjoy!
