As I said on Monday, I am in NYC for work and love indulging in a good slice of NYC pizza. But, I try not to treat myself until work is over. I’m not saying today’s recipe is a replacement for NYC pizza, but it held me over until I got here. I saw this idea on the Rachael Ray Show and have made many varieties since. Simply pound a chicken breast and layer it with your choice of toppings. Follow the recipe below for my healthy chicken pizza.
2 Chicken Breasts
1 Container of Cherry Tomatoes
Arugula
Feta Cheese
EVOO
Salt, Pepper, Italian Spices
Lay your chicken in between a sheet of plastic wrap
Pound the chicken until 1/2 inch thick. While pounding, first pound the chicken in the middle, then continue your movement to the outer rim of the chicken in one fluid motion. This will ensure that the chicken breast is the same thickness.
Season with spices on both sides
Over a medium high heat, add EVOO then tomatoes
Cover until tomatoes begin to burst
Once tomatoes burst, smash
Remove tomatoes, add a drizzle of EVOO, then add chicken
Brown chicken on both sides
Once brown, top with smashed tomatoes
Top with Arugula
Sprinkle with cheese
Serve once cheese is slightly melted
Serve over a bed of arugula
Now, I am going to go and enjoy a real slice of NYC pizza! Yum!
