Cauliflower Crust Corned Beef Pizza

I love indulging in corned beef and cabbage on Saint Patrick’s Day, but always have a lot left over, so I look for new recipes to incorporate these ingredients.  Today I mixed corned beef and cabbage with a few other traditional St. Patrick’s Day ingredients to give you a cauliflower crust corned beef, cabbage, and brussels sprouts pizza!  Say whhhhhat!  Yeah, go ahead and cook even extra corned beef because you will be making this pizza recipe over and over!  (and make sure you freeze some corned beef so when you get the craving in 2 months, you can make this recipe!)  Follow the recipe below, and I hope you love it as much as I do!

Ingredients For Cauliflower Crust:

Nonstick spray

1 Head of Cauliflower

1 large egg, lightly beaten

1 Cup Mozzarella Cheese (or you can use swiss)

2 tablespoons grated or shredded parmesan cheese

Salt, freshly ground black pepper, and cayenne pepper

For Corned Beef:

3 Pounds Pre-Seasoned Corned Beef, cooled and cut into chunks

Ingredients For Pizza Toppings:

1 Cup Shredded Swiss Cheese

1/2 Cup Shredded Cabbage

1/2 Cup Brussels Sprouts, sliced into fourths

To Prepare corned beef:

(Do this step at least a day in advance)

Bring a 3-quart pot of water (2/3 full) to a boil

Add corned beef and bring to boil

Once boiling, turn to low and let corned beef simmer on low covered for 3 hours (you can also use your crock pot and turn on low for 6 hours)

To Prepare Cauliflower Crust:

Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF

Cut cauliflower into chunks

Steam cauliflower in microwave for approximately seven to eight minutes, or until tender

Using an immersion blender, blend to puree cauliflower and let cool (or you can use a food processor)

Mix in the egg, one cup mozzarella, parmesan cheese, and spices

Once combined, pat or form the cauliflower into circle

Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until golden

While crust is cooking, sauté brussels sprouts in pan on stove until browned

Take crust out and start layering on your toppings, first with the shredded cheese

Next, top with raw cabbage and sautéed brussels sprouts

Finally, top pizza with chunks of corned beef

Place pizza back in oven until cheese starts to bubble and corned beef begins to crisp

Topped with Corned Beef and ready to go into the oven!

Remove pizza from oven, slice, and enjoy!
