Happy Thirsty Thursday!! Self magazine just published a story on the 2015 food trends and Matcha Green Tea, a fine-ground, powdered green tea with an energy boost comparable to coffee, is a huge trend for the year! I love the tea, but it takes careful preparations and a special whisk, so today I have brought you a non-finicky Matcha Green Tea recipe everyone will love–because it is in cookie form! Follow the recipe below to get a jump start on the 2015 food trends from Self Magazine!
1 cup (2 sticks) butter, room temperature
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
2 tablespoons Japanese green matcha powder
2 cups white chocolate chips or chunks
1 1/2 cups roughly chopped macadamia nuts
Preheat oven to 350 degrees
Put butter and sugars in the bowl of an electric mixer
Beat until light and fluffy, about 2 minutes
Add in eggs, one at a time
Sift flour, baking soda, baking powder, Matcha powder & salt into a medium bowl
Gradually add to butter mixture until combined
Stir in oatmeal, white chocolate chips, and nuts
Drop batter by heaping tablespoons onto parchment lined cookie sheets
Bake 12-16 minutes
Let cool on sheets on wire racks for 2 minutes
Transfer cookies to wire racks to cool completely
Plate and serve to your guests!!
Yield: About 4 dozen
