I love eating nachos, but my waistline not so much. Sure the chips, the sauces, and the copious amounts of cheese are good, but they are just not worth the calories sometimes. So, today is a great healthier and cleaner, but just as tasty version of nachos. Sub the chips for sweet potato slices, a drizzle of sauce, and guacamole and you get my sweet potato nachos! I hope you enjoy these as much as I did.
1 Sweet Potato
Chicken
Spices of choice for Chicken
Avocado
Tomatoes
Pepper
Lime Juice
Garlic Salt, Onion Powder, Pepper
Preheat oven to 375
Slice sweet potato in 1/8 inch slices
Bake in oven for 20 minutes or until sweet potato slices are tender
While sweet potato is baking in oven, sauté chicken in spices of choice in skillet on stove
While chicken and sweet potatoes are baking, make guacamole
Assemble the nachos by layering sweet potato slices, sprinkle with black beans, then add diced chicken, and top with guacamole
Serve and enjoy! You may have to eat with a fork in addition to your hands just to make sure you pick up all of the tid bits, but who doesn’t do that with nachos?!
