It is cold and rainy in LA, so that means it’s soup weather! I made this soup and have eaten it for lunch and dinner every day since. It is a simple four ingredient (minus the spices) lemony chicken quinoa soup. It is hearty, refreshing, and perfect for a cold and rainy day! Follow the recipe below to warm you up!
1 Box of Chicken Stock
1 Package of Chicken
1 Cup Quinoa
Salt, Pepper, Onion Powder, Garlic Salt, and any other spices you like (I added ginger and thyme)
Warm chicken stock, juice of 2 lemons, 1 TBSP lemon zest, and spices in crock pot on high for about 30 minutes
Add chicken and cook on high for 1 hour
After 30 minutes, take chicken out and shred, using two forks to pull meat apart
Turn heat to low and cook for another 30 minutes
Spoon into bowl when ready to be enjoyed and top with lemon zest
