Happy Friday and Happy National Pasta Day! I am celebrating with this recipe that is perfect for a cold fall or winter night. It is a delicious and hearty play on tuna casserole, that uses spaghetti squash and has a pumpkin Alfredo sauce. Follow the recipe below!
1 Spaghetti Squash
1/2 Cup Pumpkin Puree
1 Jar Alfredo Sauce
2 Cans Tuna
1/2 Bag of Frozen Peas
Nutmeg, Pumpkin Pie Spice, Salt, and Pepper
1/4 Cup White Wine
2 TBSP Apple Cider Vinegar
Cook spaghetti squash–recipe HERE
Combine Alfredo, pumpkin puree, wine, apple cider vinegar, a few shakes of nutmeg, 2 pinches of salt, 1/4 TSP black pepper and 1/4 TSP Pumpkin Puree in a crock pot on medium setting
Add spaghetti squash and stir in tuna
Stir in the peas
Cook in crock pot on medium for 1-2 hours
