I love granola, but I feel the store bought kind always has too much sugar and dried fruit, so I typically make my own. If you make the granola at home, you control the amount of oats, nuts, dried fruit, and sweetener to be just as you wish. Follow the recipe below, or you can add dried fruit, or other ingredients you wish!
Mom’s Homemade Granola:
4 cups oatmeal
2 cups slivered almonds
1/2 cup large chopped pecans
1 cup large chopped walnuts
1/2 cup pepitos or sunflower seeds (or any 8 cups combo of the above ingredients)
1/4 cup canola oil
1/4 cup honey
1/2 cup maple syrup
1 teaspoon vanilla
Preheat oven to 225 degrees
Prepare 2 rimmed cookie pans with foil & spray
In a large mixing bowl combine all the oats, seeds, and nuts
In a 2 cup measuring cup combine all the liquid ingredients and stir with fork
Pour liquid ingredients into oats mixture. Mix well until evenly moistened
Spread on 2 foil lined & sprayed rimmed cookie pans
Bake for 75-90 minutes
Remember to “stir” every 15 minutes & change pans (top & bottom oven shelves)
Watch carefully so granola doesn’t burn
Cool and store in containers or zip lock bags
Can be kept in freezer
