Superbowl Eats–Buffalo Chicken Nachos!

With one day left to plan your Superbowl party menu, I thought I would give you one last recipe to add to the menu!  (Sorry I neglected you this week!)  For today’s recipe, I took two sports food staples and mashed them together.  I am a fan of wings, but I can only eat boneless and with a fork (I know, I’m weird!)  I also love nachos!  I decided to combine these two and make buffalo chicken nachos!  They have all the key ingredients of wings–buffalo sauce, chicken, bleu cheese, and even the celery.  And they have all the key ingredients for nachos–chips and cheese!!!  Follow the directions below for a great Superbowl recipe!

First, you need to make the buffalo chicken

1 Package Chicken Breasts

1 Jar of Buffalo sauce

Salt and Pepper

Trim any fat from the chicken breasts

Season each breast with salt and pepper on each side

Add to slow cooker

Let cook chicken cook almost entirely (mine took an hour and a half on high)

Shred chicken using two forks

Place chicken back in slow cooker and turn to lowest setting

Once cooked, turn slow cooker off

I actually made my chicken a day in advance and let the chicken soak in the buffalo sauce over night

Guacamole:

1 Avocado

Onion

Pepper

Tomato

Lime

Garlic Salt, Onion Powder, Salt, and Pepper to taste

Dice all avocado, onion, tomatoes, and pepper (amount depends on how much of each you like!)

Mix these ingredients, spices, and a squeeze of lime in a bowl and set aside

Nachos:

Chips of your choice

Spinach

Tomatoes

Celery

Black Beans

Olives

Bleu Cheese

Shredded Cheese (not pictured)

Buffalo Chicken

Lay chips on plate and top with shredded spinach

Add shredded cheese, bleu cheese, black beans

Top with diced celery, tomatoes, and buffalo chicken

Heat in microwave for approximately 45-60 seconds, or until cheese is melted

Top with guacamole
