Meatless Monday-Brick Bread

If you have a family or friends who like nuts and seeds as much as my family, you are going to love today’s recipe!  Some of my friends used to call me a bird in college because when I went on road trips, I would always bring baggies of nuts.  And, in my apartment I always have a bowl of nuts for snacking.  This recipe is a deliciously dense super seed bread from the Associated Press. My family calls it brick bread because it almost feels like a brick because it is so dense.  But, it is so delicious.  Follow the recipe below and I hope you enjoy!

2 TBSP Honey

3 TBSP EVOO

1 3/4 Cups Water

1/2 Cup Hulled Pumpkin Seeds (pepitas)

1/4 Cup Whole Flax Seeds

1/4 Cup with Sesame Seeds

1/4 Cup Chia Seeds

1 Cup Quick Oats

1/2 Cup Quick Barley (I used regular barley and cooked it to the packages directions)

1/4 Cup Psyllium Seed Husks

1/2 Cup Slivered Almonds, toasted

1/2 Cup Hazelnuts, toasted

1 TSP salt (do not use if you are using salted nuts)

(I add a TSP of cinnamon and a shake or two of nutmeg to give it a little something)

(You can also substitute the seeds if you would like.  I substituted walnuts for hazelnuts)

Coat a loaf pan with cooking spray

In a measuring cup, whisk together the honey, olive oil, and water

In a medium bowl, mix together the pumpkin seeds, sunflower, seeds, flax seeds, sesame seeds, which seeds, oats, barley, psyllium seed husks, almonds, hazelnuts, and salt

Add water mixture and mix well

Pour the mixture into the prepared loaf pan, smoothing the top with moistened fingers

Cover with plastic wrap and let sit at room temperature for at least 3 hours or up to overnight

When ready to bake, heat oven to 350

Uncover the loaf and bake for 30 minutes

Remove from the loaf pan and place on a wire rack in oven

Bake for another 30 minutes, or until deep golden brown and hollow sounding when tapped

Let completely cool on wire rack before slicing

I serve mine topped with apple butter!
