‘Tis the Season (for Holiday cookies!)

Can you believe Christmas is a little over a week away?!  Where has this year gone?  My answer, I don’t know!  So, if you aren’t spreading Christmas and holiday cheer yet, I am going to help you with these festive bars.  I actually made these over Thanksgiving instead of Pecan pie, and they were such a great success that I am going to remake them for Christmas.  My family always has a plate of cookies for dessert with (optional) ice cream, in addition to a pie or cake!  (Wow we sound like fat kids!)  Follow the recipe below to start spreading your festive cheer!

Pecan Pie Bars:

Crust Ingredients:

1 cup butter, softened

2 cups flour

1/2 cup confectioner’s sugar

Pie Ingredients:

3 eggs

1/2 cup sugar

1 cup corn syrup

1 teaspoon vanilla

4 Tablespoons butter, melted

pinch salt

2 1/2 cups pecans

Preheat oven to 350

For Crust, mix together butter, flour, and confectioner’s sugar

Press into the bottom of a greased 9×13 inch baking pan

Bake for approximately 15 minutes, or until lightly golden

For Pie:  Beat the eggs, add the sugar, mix well

Add the corn syrup, salt, and vanilla

Mix in the melted butter

Mix in the pecans

Pour into crust

Bake for 30 minutes

Let cool and cut the bars to the desired size!
