The past few weeks, it has become chilly by LA standards. So, nothing tasted better than a hot bowl of soup. I ordered stracciatella soup from Doughboys and couldn’t believe how simple but tasty this soup was, so I decided to try to make it myself. Within the past weeks, this has become a staple in my apartment! Follow the directions below for simple, healthy, and warming soup recipe!
2 Cups Chicken Stock
1-2 Cups Spinach
2 TBSP Scallions, cut
1/8 Cup Onions, diced1 Egg or 2 Egg WhitesSaltParmesan Cheese to garnish (optional)While bringing chicken stock to a boil, chop spinach and whisk egg
Once chicken stock is boiling, add salt, and reduce heat
Add onions and scallions
After 15-20 minutes of simmering, add whisked egg
Once egg is completely cooked in the chicken stock (about 2-4 minutes), transfer to a bowl
Add spinach to soup
Serve soup, topped with cheese once spinach is wilted
