Pesto Packed Pepper!

I recently picked my own produce at Underwood Family Farms and wanted to make a recipe with the tomato, eggplant, and tomato that I picked.  I laid the ingredients on my cutting board and opened my fridge and this is the recipe I came up with!  It was a delicious pesto packed pepper that I have made over and over since making it the first time!  Follow the recipe below and you surely will be making this recipe over and over as well!

1 green pepper

1/4 onion

1/4 small eggplant

1/4 tomato

4 TBSP Pesto

1 1-pound package of Ground Turkey or Chicken

A few slices of Mozzarella cheese

Olives to garnish

Preheat oven to 375

Cut the pepper about 1/2 inch from top, scrap out inside, and remove stem

Cut eggplant, onion, tomato, and mozzarella in 1/4 inch slices

Cut olives in 1/4

Wrap pepper in tin foil and place on baking dish

Place in oven and bake for 10 minutes

While pepper is baking in the oven, brown your ground chicken/turkey in a medium-high heat skillet on stove

Once fully cooked, add pesto

Also while pepper is baking, sauté 2 slices of onion in olive oil on stove until golden brown

Once pepper is done baking, remove from oven and cut tin foil to release heat

Once tin foil is cool to touch, remove and place pepper in baking dish

Add a few spoonfuls of pesto ground chicken/turkey to bottom

Layer veggies, cheese, and ground chicken/turkey as desired

Place top of pepper on top layer and bake in oven for about 10-15 minutes

When cheese starts to bubble and brown, remove from oven and plate

This recipe is so colorful and veggie packed!  If you don’t want to layer, you can cut veggies in bite sized pieces, mix together, and spoon entire mixture into pepper.  I hope you enjoy this recipe as much as I do!
