Meatless Monday-Real Tomato Soup

As you can see from the lack of Meatless Monday posts, I haven’t had much inspiration for them lately!  But, this has come to a stop!  I received a copy of The SimplyRaw Kitchen in the mail and I could not have been more excited to try the recipes!  The book is filled with beverages, breakfast, soups, salad & salad dressing, pates, dip, spread & “cheeez”, main dish, and dessert recipes.  It also includes some tiips and techniques for a raw diet.  Here is a little information about The SimplyRaw Kitchen and the author, Natasha Kyssa.

She has appeared as a speaker at TedX, and is a frequent presenter at health, wellness, and vegan festivals where she often talks about nutrition as the best and most affordable method of preventative health care. Natasha also hosts professional seminars and workshops. Her popular first book, The SimplyRaw Living Foods Detox Manual, was published in 2009.
I was skimming the pages and the recipe I decided to try first jumped off the page to me because it was so colorful and easy to whip up.  Follow the recipe below and have a healthy Meatless Monday!

Large Tomatoes, Chopped

2 Red Bell Peppers, Chopped

1/2 Cup Hemp Seeds

2 TBSP Lime Juice

1 TBSP Light Miso

2 TBSP Gluten-free Tamari

1/2 Avocado, chpped

1 TBSP Maple Syrup or a few drops of stevia (optional)

Himalayan salt, to taste

Ground Black Pepper, to taste

2 TBSP Chopped Chives, for garnish

In a blender, process tomatoes, peppers, hemp seeds, lime juice, miso, tamari, avocado, and maple syrup (if using) until smooth

Pour into bowl(s)

Top with chives, and tomatoes and avocado if desired!

I first tried the soup at room temperature and the next night I tried it chilled, which I liked better.

I am very excited to try more recipes from The SimplyRaw Kitchen, and I will be sure you let you know how they turn out!  The book will be available in October 2013.
