Happy Monday! Hope everyone had a great Easter weekend! It has been awhile since I posted a Meatless Monday, but I have a delicious one for you today from Relish.com. Follow the directions below for a healthy and delicious meatless Monday recipe!
1 Cup Quinoa
1 Garlic Clove, minced
2 Cups Water
5 Ounces Baby Spinach
1 Cup Cherry Tomatoes,
1/2 Cup Walnut Pieces, toasted
1/2 Cup Parmesan Cheese
1 Small Head of Broccoli (I added this to the recipe for a few more veggies!)
Olive Oil
Salt, Pepper to taste
Place quinoa in small bowl, add just enough water to cover, and swish to rinse
Pour into fine mesh strainer to drain well
Heat olive oil in large skillet
Add quinoa
Cook, stirring, over medium eat until golden (about 10 minutes)
Add garlic and cook, stirring 1 minute
Bring 2 cups of water to boil in saucepan, and add salt and quinoa
Bring to boil again, reduce heat, cover, and cook over medium-low heat until water is absorbed
In skillet, sauté tomatoes, broccoli, and spinach
Season with salt and pepper
Once sautéed, add to quinoa
Stir in walnuts and cheese, and more seasonings if needed
Stir to combine
Serve once cheese is melted
