SuperBowl Crunchy Chicken Tenders

Happy Friday!  If you have been reading NewsforChews this week, you have noticed that I have been giving you great recipes to serve at your Superbowl party!  I have one more for you…Crunchy Chicken Tenders!  Follow the recipe below and you will have an impressive spread to serve at your party!

15 Ritz crackers, finely crushed

1/4 cup pecans, ground

1 tsp  paprika

1/8 tsp cayenne pepper

1/2 tsp salt

1/2 tsp pepper

1 egg white

Olive oil cooking spray

1 1/2 lb. chicken tenders

1/4 cup flour

Preheat oven to 425 degrees

Stir together crackers, pecans & spices on shallow plate

Whisk egg white until foamy

Place a wire rack coated with cooking spray in a parchment lined 15×10 inch jelly roll pan

Dredge chicken tenders in flour; dip in egg white; dredge in cracker mixture

Lightly coat chicken on each side with cooking spray and arrange chicken on wire rack (to get rid of any excess mixture)

Bake at 425 degrees for 15-20 minutes or until golden brown

Turn once after 12 minutes

Once baked through, place on wire rack

Serve as appetizer or main dish!
