Pomegranate Balsamic Pork and Sauerkraut

Happy New Year!  Hope your 2013 has treated you well so far.  Did you eat your lucky Pork and Sauerkraut yesterday (it is a Pennsylvania Dutch tradition)?  I usually eat pork tenderloin with seasoning that was roasted in the oven, but this year I decided to elaborate the pork recipe.  I made a pomegranate balsamic reduction to pour over the pork.  Follow my directions below for my delicious New Years Day meal.

Pork Tenderloin:

1 Pork Tenderloin (I used half of a 1.4 pound loin)

4 TBSP Olive Oil

Herbes de Provence, Onion Powder, Garlic Salt, Pepper, Rosemary

Preheat oven to 400

Whisk olive oil and all spices except rosemary together

Place pork and marinade in plastic zip-lock bag

Massage marinade into pork and let stand for 15-20 minutes

Spray baking dish with cooking spray and place pork in dish

Top with rosemary

Bake in oven for 50 minutes with tin foil tent

With 15 minutes left on timer, begin pomegranate balsamic reduction

1 Pomegranate, seeds removed

1/3 Cup Balsamic Vinegar

1 TSP Sugar (I used Ginger Sugar)

2 inches of Ginger

1 Garlic Clove

EVOO

Coat bottom of saucepan with olive oil

Using a microplane or zester, grate garlic into pan

Saute garlic until golden brown

Juice pomegranate seeds and ginger in juicer.

Add balsamic vinegar to juiced pomegranate seeds and ginger

Pour juice into saucepan, add sugar, and turn heat to high

Boil until mixture starts to thicken and reduce heat to a simmer until pork is finished cooking

Take pork out of oven and let rest for 10 minutes

Slice pork and plate topped with pomegranate balsamic reduction

For Sauerkraut:

Buy sauerkraut in jar, strain to remove excess liquid, and cook in sautee pan until golden brown

I served my pork and sauerkraut with mashed cauliflower and peas.  (Follow THIS recipe, but add 3/4 cup peas)
