With it being Superbowl week (my team didn’t make it–I don’t want to talk about it!), I wanted to provide you with a healthy, hearty, but equally delicious burger recipe! Everyone can purchase store-bought burgers and sides to top on, but if you really want to impress your guests, or you have a vegetarian on the guest list, this burger is a must-make! Follow the recipe below for an amazing lentil, chickpea, and veggie burger!
4 TBSP Olive Oil, Divided
1/2 Large Onion, Chopped
1/2 Yellow or Orange Pepper, Choped
8 oz Thinly Sliced Mushrooms
1 TSP Cayenne Pepper
1 1/2 Cup lentils-prepared to package’s instructions
1 (16-oz) Can Chickpeas, drained and rinsed
1 TBSP Worcestesrhire Sauce
2 TBSP Fresh Chopped Parsley
1 Egg, Beaten (or 2 egg whites)
2 Cups Fresh Breadcrumbs
1 Cup Shredded Gruyere or Cheddar Cheese
1 Cup Crumbled Feta
1/2 TSP Salt
Black Pepper
Chop and slice onion, pepper, and mushrooms
Saute chopped onion and pepper in 1 1/2 tablespoons olive oil until tender
Add cayenne pepper
Place onion and pepper in separate dish
Saute sliced mushrooms in 2 1/2 tablespoons of olive oil until tender
Place half of the mushrooms in dish with onions & pepper, reserve the other half for garnish
Put cooked lentils & chickpeas into bowl of a food processor and pulse until coarsely chopped
Add veggie mixture, Worcestershire sauce, & parsley and pulse again until combined and nearly smooth
Spoon mixture into large bowl and add egg, breadcrumbs, salt, black pepper & cheeses
Mix and shape into 8 patties
Chill in refrigerator for at least 30 minutes
Sauté on medium heat in olive oil until lightly brown
Serve burger with desired sides! I served baked sweet potato fries and salad.
