Ground Turkey Fried “Rice”

Fried rice is one of my favorite foods to eat at a Chinese restaurant, but I don’t like all of the calories that comes with it, so I do not order it much.  I have been craving fried rice, so I decided to recreate a healthier version!  I swapped a few ingredients and loaded up on the veggies!  Follow the recipe below for the delicious recipe!

1 1/2 Cups Barley

1/2 Pound Ground Turkey

1 TBSP Chopped Ginger

4 Scallions, sliced

1 Cup Frozen Peas

1 Cup Snow Peas, cut in half

2 Carrots, Diced

2 TBSP Hoisin Sauce

2 TBSP Soy Sauce

2 Eggs

Garlic Salt

Cook barley according to instructions

Coat bottom of skillet with olive oil and add carrots

Cook carrots until tender

Coat the bottom of a large pot, and add ground turkey, ginger, and 3/4 scallions

One ground turkey is browned, crack eggs into pot

Scramble egg into mixture and add carrots, peas, snow peas, hoisin sauce, soy sauce, barley, and garlic salt

Turn on low and cover for 5-10 minutes to let tastes combine

Plate and garnish with the remaining scallions

This meal more delicious than a restaurants version, and became an instant favorite.  Next time I am going to try making this recipe with shrimp and quinoa!  Give this recipe a try and let me know how you like it!
