Happy Halloween!! If you are like most people, the moment Starbucks announces their Pumpkin Spice Latte is available, you go running to order one. While I love the latte, I want a healthier version, since the “pumpkin” in the latte is a syrup that is approximately 65 calories for 1 ounce. So, I found a recipe from Averie Cooks for a pumpkin spice latte that uses actual pumpkin puree and adapted the recipe a bit. Follow the recipe below and you will have people running to your house instead of the Starbucks line!
Pot of strong coffee (I used pumpkin coffee!)
1 Cup Milk
2/3 Cup Pumpkin Puree (you can use more if you love the taste of pumpkin)
1/2 TBSP Pumpkin Pie Spice
1/2 TBSP Cinnamon
1/2 TBSP Vanilla Extract
1/2 TBSP Honey
Pinch of ground nutmeg and ginger
Combine all ingredients in a small bowl and whisk together, or blend in a blender
Warm ingredients in saucepan over low heat
Fill coffee cup halfway with coffee and the rest with pumpkin mixture
Stir coffee and mixture together
Top with milk froth and pumpkin spice spice
