Some of my produce from when I picked my own at Underwood Family Farm was still good, so I made another Meatless Monday recipe for you! I used almost the same ingredients as the ratatouille I made last week (recipe HERE), minus the green beans and eggplant. Use the ingredients below and follow the direction from last week’s Meatless Monday recipe for this week’s lettuce cup recipe.
1/2 Pepper
1/2 Yellow Squash
1/2 Zucchini
1/2 Cup Grape Tomatoes, cut in half
Lettuce Cups
1/4 Cup Lentils
Salt, Pepper, Garlic Salt, Onion Powder, and Herbes de Provence to taste
A few tablespoons of wine
Prepare the lentils according to the package’s directions
Clean and lay lettuce cups on plate
Scoop vegetable mixture in cups and serve
Top with lentils and enjoy!
