I have been away for a long time and I missed you! I hope you missed me! I was off eating at great LA restaurants for my mom’s birthday, visiting college favorites, and trying delicious NYC eateries! But, I am finally back!! Since the weather is starting to get a little cooler and Halloween is fast approaching, today’s Meatless Monday will surely put anyone in the fall spirit by making the entire house smell like fall! Follow the recipe below and enjoy my crock pot applesauce!
5 Medium Gala Apples
5 Medium Granny Smith Apples
4 TSP Cinnamon
2 TSP Nutmeg
1/4 Cup Brown Sugar
1/4 Cup Granulated Sugar
Juice of 1 Lemon
1 Cup Water
Core and cut apples into bite sized pieces
Combine and stir apples and spices in crock pot
Add water and lemon juice and stir to combine
Set crock pot to high for 3 hours and stir occasionally
After 3 hours, use a hand blender (I have THIS Hamilton Beach one) to blend together contents of crock pot. I left my applesauce a bit chunky, but if you prefer yours smoother, blend until your desired thickness. You also may have to add a little more liquid for smooth applesauce or add more sugar if a sweeter applesauce is desired).
Set crock pot to low and cook for another hour
Spoon applesauce into bowl and serve garnished with cinnamon and apple slices!
