Hope everyone had a safe, fun, and yummy Labor Day! I had seen pictures of this recipe for quite some time and I thought no better day to try it than the last day of summer! I looked carefully at the pictures and came up with a recipe on my own. It turned out exactly how I wanted it to taste! Follow the recipe below and enjoy!
1 Ear of Corn
1 TBSP Lime Juice
1/4 TSP Cayenne Pepper
1/4 TSP Salt (I used Chipotle Salt)
1/4 TSP Paprika
1 TSP Butter
2 TBSP Feta Cheese
Preheat oven to 350
Shuck and clean corn
Place in tin foil and pour lime juice over corn
Roll and seal tin foil (will look like a burrito)
Bake in oven for 30 minutes
Combine salt, pepper, and paprika in bowl
Once corn is baked, let cool until you can open foil with hands
Butter the corn
Pour spice mixture and cheese in tin foil and rub into corn (the cheese should start melting into the spice mixture, which will make it easier to rub into the corn)
I sprinkled my corn with a little more lime juice and plated
