Yesterday I went to Underwood Family Farms and picked my own produce. I love picking my food off the vine and going home to make a healthy and clean dinner!
I decided to make a version of Ratatouille with all of my vegetables. The key ingredient is tomatoes, with an addition of garlic, onions, peppers, other veggies, and a mix of green herbs such as Herbes de Provence. Follow my recipe below!
1/2 Yellow Squash
1 Cup Green Beans
Salt, Pepper, Garlic Salt, Onion Powder, and Herbes de Provence to taste
A few tablespoons of wine
Cheese to garnish (I used Feta)
Cut vegetables into bit sized pieces
Sautee vegetables on skillet at medium-high heat
Add spices and wine
Let reduce, then stir in green beans
Cover and cook for 2 minutes on low heat
Plate and top with cheese
I think the fresh picked vegetables provide a lot more flavor than the produce from the grocery store. If you have the opportunity to go to Underwood Family Farms or another farm where you can pick your produce, I highly recommend it!
