This weekend, I had a weird craving for a salad that I had 3 1/2 years ago and haven’t had since! One of my best friends made it for me and for some reason I wanted to make it this weekend. It is a great and healthy option you can make for your 4th of July BBQ! Follow the directions below!
Pepper, Onion, Tomato Balsamic Salad:
3 Peppers
1 Onion
1 Package (16 ounces) of Tomatoes
8 TBSP Balsamic Vinegar
1 Package (4 ounces) of crumbled Feta Cheese
1 Package of Craisins
Salt and Pepper to taste
Large plastic bag
Chop peppers and onions into 2-3 inch sections
Cut tomatoes into fourths
Place peppers and tomatoes in plastic bag
Lightly grill onions and let cool
Once cooled, place onions in bag and add balsamic vinegar and seasoning
Place mixture in fridge overnight (or make in morning to serve for dinner). If you have the chance, turn the bag to make sure the mixture marinates in the balsamic vinegar. Before serving, add feta cheese and Craisins.
Serve as an appetizer or salad!
