Happy Monday! Hope you all had a great weekend! Today’s recipe is another great Meatless Monday recipe that I made up using some of my favorite ingredients!
1 Bunch Broccolini
4 Ounces Mushrooms, sliced
4 Ounces Cherry Tomatoes, halved
1/2 Package Tempeh, cut into cubes
Black Pepper, Garlic Salt, Onion Powder, and Red Pepper Flakes to taste
1/4 Cup Lemon Juice
Sautee veggies in pan lightly coated with EVOO and add spices and lemon juice
Sautee tempeh in separate pan lightly coated with EVOO
Once the veggies and tempeh are cooked, plate veggies and add tempeh on top
How colorful and yummy does this look?! If you don’t want a meatless meal, substitute chicken or turkey for the tempeh!
