Shrimp Burrito

I hadn’t eaten shrimp or a burrito in awhile and decided to combine my food craving into a healthy, shrimp burrito.  Follow my directions below and enjoy as much as I did!

1/2 Pound Shrimp

2 TBSP Lime Juice

2 TBSP Lemon Juice

2 TBSP White Wine

Garlic Salt, Onion Powder, Black Pepper

1/2 Can Black Beans

1/4 Cup Quinoa, cooked to package’s instruction


Shredded Cheese to garnish

Avocado to garnish

Combine lime juice, lemon juice, wine, and spices

Lay shrimp in a shallow bowl and pour mixture over shrimp

Marinating Shrimp

After 15 minutes, flip shrimp

Drain black black beans, add to cooked quinoa, and add spices

After 15 minutes, cook shrimp on stove for 2 minutes per side (as you will see, the acid from the lime and lemon juices will have already started to cook the shrimp, and they will have turned a little pink)


Build your burrito with the quinoa, black beans, shrimp, and avocado!

I will definitely be having this recipe again!  I felt much healthier eating this than a heaving burrito with meat and rice.  Hope you give this recipe a try and have a great weekend!
