This past weekend, I went to California Pizza Kitchen for dinner. Before this weekend I couldn’t remember the last time I had been…and let’s just say it will be awhile until I go again. (A tip-don’t order their mojitos…you will just want to return them after your first sip!). But dining at CPK did inspire today’s Meatless Monday post, so I can’t complain too much. Today we will be dining on BBQ Tofu pizza. Read my recipe below and enjoy!
1 Large Tortilla
1/2 Cup Tomato Sauce
1/2 Cup Mozzarella Cheese
1/4 Pepper, sliced
1/4 Cup Mushrooms
1 spear Kale, leaves removed and torn into small pieces
3 Ounces BBQ Tofu (store bought)
Preheat oven to 375
Spray cookie sheet lined with aluminum foil and place the tortilla on sheet
Bake in oven for 5 minutes
Take out of oven and add tomato sauce and cheese
Turn oven to 450
Add pepper, mushrooms, kale, and tofu
Bake in oven for 8-10 minutes or until edges are crispy and cheese is melted
Cut pizza into slices and serve with BBQ sauce and Ranch (Hidden Valley, of course!)
My pizza was much more delicious than CPK’s, didn’t take nearly as long to put on my table, and was much healthier. As you can see by my not so good dinner out, any dinner out can influence a better meal at home.
