Happy Monday everyone! Today’s meatless Monday could be used as a main meal or a side dish and is easily prepared! You can serve for meatless Monday, or add chicken and serve at another time! Follow the recipe below and enjoy!
8 Ounces Crimini Mushrooms, quartered
4 Ounces Cherry Tomatoes, cut in half
4 Ounces Frozen Spinach
1 Can White Kidney Beans
1/4 Cup Quinoa
Extra Virgin Olive Oi (EVOO)
Shredded Cheese for garnish
Black Pepper, Garlic Salt, and Onion Powder to taste
In a pot, cook quinoa according to package’s instructions
In large sautee pan, lightly coat the bottom with EVOO
Once pan is hot sautee mushrooms and cherry tomatoes until cooked
Add spices and stir to combine
Add spinach, kidney beans, and spices again
Once quinoa has cooked, add quinoa and spices again, and stir to combine
Turn on low and cover to let spices and tastes combine
When ready to serve, spoon mixture into bowl and top with shredded cheese (I used Parmesan)
If I was serving as a main meal, I would add tempeh or tofu (make it easy on yourself and grab some prepared cubed tofu!).
