Grilled Pistachio Encrusted Salmon

I had grilled pistachio encrusted salmon for dinner when I visited NYC a few weeks ago and couldn’t get it off my mind until I make up today’s recipe!  This is a must-have again recipe!  Hope you enjoy.

2  6-ounce Salmon fillets

1/8 cup mayonnaise or Greek yogurt

1 Tablespoon Dijon mustard

3/4 cup chopped pistachios

Place two 6-ounce Salmon fillets on aluminum foil sprayed with cooking oil spray

Combine mayo or Greek Yogurt and mustard

Salmon and Greek Yogurt/Mayo mixture

Spread Greek Yogurt and Mayo mixture on salmon

Greek Yogurt/Mayo spread on Salmon

Sprinkle with chopped pistachios

Salmon sprinkled with pistachios


Grill on preheated grill for 10-17 minutes (or bake in oven at 425)

Pistachio encrusted Salmon and Asparagus!
