Meatless Monday-Pesto Baked Tofu

Hope everyone had a great weekend.  I’ll let you know how my raw food 3 day cleanse went, but I wanted to give you a recipe to make your tofu taste and look great!

Preheat oven to 375

1 Package of Extra Firm Tofu

2 TBSP Pesto

2 TBSP Shredded Parmesan Cheese

1/2 Container Cherry Tomatoes

First, drain the tofu (like I showed you HERE).

On the stove, crumble tofu on medium-high heat and cook for 5-10 minutes

Cut tomatoes in half

Place tofu in baking dish and add tomatoes

Stir in pesto and cheese

Bake in oven for 15 minutes until browned along edges

So, if you read my post on Friday, I told you that I was going to attempt a raw food cleanse for 3 days.  And, on my twitter account (@newsforchews) I gave you updates all weekend long.  I won’t say that this was the easiest thing to do,  but now I do feel energized, healthy, and cleansed.  Below is my food schedule and a few pictures.


Breakfast: Hot lemon water and Juice

Lunch:  Juice and grilled chicken breast

Dinner:  Juice and hard boiled eggs

Snacks:  Grapes


Breakfast:  Hot lemon water and Juice

Lunch:  Salad with grilled chicken and lemon juice as dressing

Dinner:  Juice and hard boiled egg and 1/2 chicken breast

Snacks:  Celery and Strawberries

Breakfast:  Hot lemon water and Juice

Lunch:  Grilled chicken breast, hard boiled egg, grapes, and celery

Dinner:  Carrots, Celery, strawberries, and shrimp sauteed in lemon juice

Snacks:  Grapes

Juice and hot tea

Salad and Grapes

Last Dinner of Cleanse

If you have the chance to try a raw food cleanse, I suggest you do it!  But, do it over a weekend because in the beginning you won’t have much energy!
