Easter Brunch-Oven Poached Eggs in Spinach Nests

If you haven’t planned your menu for your Easter brunch, I have the perfect recipe for you!  Delicious, healthy, and festive!  Follow the recipe below!

For Spinach Mixture:

1 Egg

2 TBSP Flour

3/4 Cup Cottage Cheese

12-16 Ounces Frozen Spinach

1/4 Cup Shredded Cheese

3-4 Eggs

Preheat oven to 350

Coat 9×9 baking dish with spray

Thaw and squeeze spinach dry

Combine 1 egg, flour, cottage cheese, and cheese.

Add spinach, salt, and pepper (you can make this up to 2 days in advance)

Mixture

Press mixture into pan

Make 4 inch circle indentations in mixture using spoon

Bake for 20 minutes in oven

Remove from oven and using spoon press indentations again.

Break 1 egg per indentation

Eggs in Spinach Nests

Bake in oven 10-15 minutes or until whites are set

Sprinkle with cheese
