Tuesday’s Tip

Today’s tip is useful if you bake and/or make your own frosting (which by my recipe you saw last week is very easy!  http://www.newsforchews.com/2012/03/14/baileys-cocoa-cupcakes/).  If you do not soften the butter before creaming (beating the butter with or without sugar), it is very hard to beat.  The best way to bring your butter to room temperature is if you leave it on the counter for about an hour before using.  It is always better to leave on counter, but, if you don’t think that far in advance, you can put the butter on a plate and microwave for 15 seconds.

Another method, I learned from Simply Recipes is to put the stick of butter between 2 sheets of wax paper.  Then use a rolling pin to press the butter down and roll it out as if you would roll a pie crust.  Roll until the butter is 1/8 to 1/4 inch thick, then peel the butter off the paper before it softens too much.  Easy softened butter!
