Meatless Monday-Applesauce Salad

Hope everyone had a great weekend!  I wanted to share with you one of my favorite salad recipes.  Both the salad recipe and the dressing recipe have only a few ingredients and are very easy!  Follow the directions below and enjoy!

Dressing:

3/4 Cup Unsweetened Applesauce

1/4 Cup Apple Cider Vinegar

1 TBSP Dijon Mustard

1/3 Cup Olive Oil

Salt & Pepper to taste

Process all ingredients except oil in blender or food processor until smooth

With motor running, add oil in a thin steady stream

Dressing may be kept in a covered container in the refrigerator for up to one week

Whisk before using

Salad:

8 cups of desired torn lettuce and/or spinach

1/2 Cup toasted, chopped nuts (pecans, walnuts, pistachios, almonds,pine nuts)

3 oz crumbled blue cheese

2 sliced golden delicious apples

Toss together all ingredients and 1/2 cup of the vinaigrette

Salad to serve 6-8

Applesauce Salad!

If you want a more summery salad, you can substitute strawberries for the apples or even berries!  And you can serve as the main dish, or you can serve as an appetizer.
