Kale Quinoa

Happy Friday!  I typically eat salads for lunch, but sometimes I just feel like something else.  I made today’s lunch with bean sprouts (make sure you come back on Monday to see what else I made with them), kale, and quinoa (always in my pantry).  So, I decided to put them all together with a little protein, and came up with this.  Hope you enjoy!

Chicken Breast

1/4 Cup Quinoa

4 leaves of kale

1/2 Cup bean sprouts

Olive oil

Black Pepper, Onion Powder, Garlic Salt

Make quinoa according to package’s instructions

Sautee bean sprouts in olive oil on stove

Sautee chicken in olive oil on stove until cooked through

Add bean sprouts, spices, and kale to quinoa

Cut chicken into bite sized pieces and add to quinoa mixture

Serve warm or cool.  You can also add cheese of your liking to the mixture
