Del Coronado Chicken!

If you read my post from Wednesday, you read about the amazing baked goat cheese dip my parents and I ate at the Del Coronado Hotel.  Today, I have turned that dip (recipe HERE) into dinner for you!  Read below for an amazing dinner that is going to be a must have at your dinner table!

Preheat oven to 375

1 Thin-Cut Chicken Breast

2 TBSP Roasted Red Peppers, chopped

2 TBSP Tomato Sauce or Diced Tomatoes

2 TBSP Pesto

1 TBSP Shredded Parmesan Cheese

2 Ounces Goat Cheese

In a small bowl, combine pesto and cheese

Spoon mixture onto chicken breast

Chicken Breast, Pesto, and Parmesan Cheese

In a small bowl, combine peppers and tomato sauce

Add mixture on top of pesto

Topped with tomato sauce and peppers

Slice cheese (be careful as it will crumble) into 1/4 inch sections and lay on top of chicken

Topped with Goat Cheese

Bake in oven 15 minutes, then turn oven to 450 and cook for another 5 minutes until cheese starts to brown around edges.

Yesterday I posted a poll on what I should make for my first juice in my new juicer.  The Beet, Carrot, Celery, Lemon, & Apple juice won by a slight margin.

Beet, Carrot, Celery, Lemon, & Apple Juice

I made the juice with:

1 Beet

2 Carrots

1 Celery Stalk

1/2 Lemon

1 Gala Apple

It was so….as Rachael Ray would say…Yumo!!  So, somehow I went from juicing my first juice to deciding to do a 3 day raw food cleanse.  Why, you may ask, why would I put myself through a raw 3 day food cleanse?  Well, for the health benefits…ridding my body of harsh chemicals, toxins, and for putting the best foods possible into my body.  And, of course because I like to challenge myself.  So, here is my (planned) food schedule for the next three days.

FRIDAY:

Breakfast:  Tea with lemon and Juice

Lunch:  Juice and Grilled Chicken Breast

Dinner  Salad with grilled chicken and lemon juice as dressing

Snacks:  Any raw fruit and/or veggie

SATURDAY:

Breakfast:  Tea with lemon and Juice

Lunch:  Juice and 2 Hard Boiled Egg

Dinner:  Salad with grilled chicken and lemon juice as dressing

Snacks:  Any raw fruit and/or veggie

SUNDAY:

Breakfast:  Tea with lemon and Juice

Lunch:  Juice and Grilled Chicken Breast

Dinner:  Salad with hard boiled eggs and lemon juice as dressing

Snacks:  Any raw fruit and/or veggie
