Breakfast Corned Beef and Egg Hash

If you are like me, I have a lot of leftover corned beef from Saint Patrick’s Day.   I decided I wanted to do something a little different than reheating the corned beef and cabbage for dinner.  So, I made breakfast with the corned beef.  With this recipe, I think I will have to make corned beef more often just so I can make this again!  Follow my recipe below for Saint Patrick’s Day for breakfast!

1/2 Sweet Potato

1/4 Sweet Onion

2 Handfuls of Baby Spinach

1/2 Cup Diced Corned Beef

1 Slice Swiss Cheese

1 Egg

Olive Oil

Black Pepper, Garlic Salt, and Onion Powder

Preheat oven to 375

Dice sweet potato and place on rimmed cookie sheet lined with tin foil

Mix sweet potato with spices and about 1/2 TBSP olive oil

Sweet Potato

While sweet potato is cooking in oven for 15 minutes, coat bottom of skillet with olive oil

Add sliced onion to medium-hot skillet and cook until caramelized (translucent and browned)

Add spinach, corned beef, and spices

Cover, turn skillet to low, and cook for 5 minutes (or until corned beef is warm)

Add sweet potatoes

Plate onions, corned beef, spinach, and potatoes and top with cheese slice

Hash with Swiss Cheese

Once egg is cooked, top plate with egg

Corned Beef and Egg Hash!

Serve and enjoy!!

On another note, tune into My Crazy Obsession tonight on TLC at 10:30.  You will follow and watch (in amazement) Zizi Howell’s obsession of carrots.  Just a few highlights of the episode include…

-Zizi started her carrot collection when she was in high school.  She started bringing carrots to punk rock shows as a high school student.

-Zizi got her first carrot tattoo 15 years ago when her son was born.  She now has over 35 carrot tattoos on her body.

-Zizi has over 1,000 carrot items in her collection.

-Zizi’s most prized carrot item is her carrot dresser. She paid $4,000 for it and she uses it to hold her mother’s ashes. She plans to join her mother in the carrot dresser after she passes.
