Bailey’s Cocoa Cupcakes

As I said yesterday, I did some baking for Saint Patrick’s Day over the weekend and wanted to make cupcakes with Bailey’s in them.  So, I did a search on the internet and found a recipe from Sweet Tooth.  But, I really wanted to make cupcakes with cocoa powder in them, and these did not.  So, I hesitantly (since in baking EVERYTHING needs to be exact measurements) improvised and added cocoa!  They turned out amazing!  Follow the directions below for the perfect Bailey’s Cocoa Cupcakes!

For the ‘s cupcakes:

2 1/2 cups all purpose flour

3 TSP baking powder

1/2 tsp salt

1/2 tsp cinnamon

1 1/2 cups granulated sugar

3 TBSP Hershey’s Cocoa Powder

12 TBSP butter  (make sure your butter is at room temperature or it will be very hard to work with!)

2 whole eggs + 2 egg whites, at room temperature

2 TSP vanilla extract

2/3 cup Bailey’s Irish Cream

For the Bailey’s buttercream frostong:

1 Cup butter

4 Cups powdered sugar

3 TBSP Bailey’s Irish Cream

Preheat oven to 350 degrees

Line muffin tins with festive cupcake liners (batter will make 24)

In a large bowl, whisk together flour, baking powder, salt, cinnamon, and Cocoa Powder

In the bowl of an electric mixer, cream together sugar and butter until light and fluffy, about 2-3 minutes

Add eggs and egg whites one at a time, beating on low between each addition

Add vanilla

Add flour slowly in 3 additions, alternating with Bailey’s, starting and ending with flour

Fill cupcake liners (don’t forget to spray with cooking spray) about 2/3 full and bake 15-17 minutes, or until a cake tester comes out clean

Allow to cool in pan for 5 minutes, then transfer to a wire rack to cool completely

While cupcakes are baking, beat butter in an electric mixer until light and fluffy

Alternate adding 1/2 cup powdered sugar and Bailey’s, until completely mixed and combined

Before frosting the cupcakes, poke holes in the tops of the cupcakes with a fork (about 3-4 times) and brush some Bailey’s on each

Load frosting into a piping bag fit with a large tip or use yesterday’s tip for a homemade frosting bag (http://www.newsforchews.com/2012/03/13/tuesdays-tip-frosting-cupcakes/) and decorate as desired
