I passed a package of veggie meatballs in the freezer department of the grocery store and wanted to try creating a dish using them. I also wanted to use artichokes, therefore this meal came about. This is a great quick, healthy, and fulfilling meatless Monday recipe. Hope you enjoy!
1 Package Veggie Meatballs (I used MorningStar)
1 Can Sliced Arithchokes
1 Cup Shelled Edamame
1 Can Diced Tomatoes with Spices
Onion Powder, Garlic Salt, and Black Pepper to taste
Parmesan Cheese to garnish
Defrost Veggie Meatballs in microwave
Add artichokes and edamame to olive oil coated pot on stove
Add veggie meatballs and spices
Add diced tomatoes
Place lid on and let everything warm throughout. Once warm, spoon into bowl and garnish with cheese
