Chicken Roll-Ups

This next recipe was concocted with some leftovers in my fridge…chicken, kale, bleu cheese, and olive tapenade, which I haven’t used in awhile.  Then, I added a can of tomatoes and artichokes, which I always have cans on in my pantry.  This chicken roll-up recipe is what I came up with.

Thin Sliced Chicken Breasts

Olive Tapenade


Bleu Cheese

Can of Diced Tomatoes with Italian Seasonings

1 Cup of Artichokes (frozen or fresh)

Black Pepper, Onion Powder, Garlic Salt to taste


Preheat oven to 350

Place cleaned chicken in sprayed baking dish

Season chicken with black pepper, onion powder, and garlic salt

Spread 1 1/2 TBSP on half of chicken

Sprinkle bleu cheese on olive tapenade

Position a few pieces of kale on top of the chicken, olive tapenade, and cheese

Kale added

Roll the chicken starting at the end with olive tapenade and cheese and place skewer to bind.  It will be a little messy and some kale, olive tapenade, and cheese may fall out…don’t worry about it!

Rolled Chicken

Pour can of diced tomatoes and artichokes over chicken roll-ups

Chicken Roll-Up

Bake chicken in preheated oven for 30 minutes

Serve garnished with bleu cheese

Chicken Roll-Up

You can substitute spinach for kale, mozzarella or Parmesan for the bleu cheese, pesto for the olive tapenade!
