A Different Kind of Sweet Potato

If you haven’t been on Pintrest, you need to look!  It has great inspirations for food, fitness, fashion, architecture, home decor, etc…but the only problem is if you find something you like, it typically doesn’t tell you much about the picture.  So, for the food you have to come up with your own recipes.  I saw pictures of sliced sweet potatoes and a potatoes with some sort of filling and immediately wanted to know the recipes.  I sent a few pictures to my mom and of course she sent a recipe back since she knows all!  I altered the recipe a bit and came up with the one below.  I loved it so much I made it the following night, and can’t wait to make it again!  You can serve as a side dish, and or I think you can even serve as finger food at a party!  Hope you enjoy as much as I do!

1 TSP Hidden Valley Ranch Salad Dressing and Seasoning Mix (powder)

2 TSP Bread Crumbs

2 TSP Parmesan Cheese

1 TSP Olive Oil

1 Sweet Potato (a long will work the best)

Preheat oven to 450

Mix together first 4 ingredients in bowl

If potato does not lay flat, slice off a portion of the bottom so it is more stable.

Cut potato into thin slices

Sliced Potato

Add mixture in between each slice and on top

Sliced Potato with spices

Cover and bake in preheated oven for 40 minutes
