I always love shopping at Whole Foods, especially the prepared food case. So, I was browsing their website and found this recipe. I used different spices, but HERE is the recipe from the site. Hope you enjoy!
1/2 cup Quinoa
1/2 cup Sprouted Green Lentils
1 medium red bell pepper, finely chopped
1 tablespoon chili powder
1 teaspoon sea salt, black pepper, onion powder, garlic salt, and Italian seasoning
1 medium sized cooked sweet potato, mashed
(Recipe called for Red Onion, but I didn’t use)
Preheat oven to 350
Cook quinoa and lentils separately according to package instructions
Drain lentils well
In a medium bowl, mix together quinoa, lentils, red pepper, seasonings
Add mashed sweet potato, and combine all ingredients using hands until mixture sticks together…it doesn’t look to pretty, but it does taste better than it looks
Form the mixture into four patties and arrange on a baking sheet lined with tin foil
Bake in oven for 10 minutes
Flip and continue baking 10-15 minutes more
Serve as a side dish and enjoy!
