Triple Citrus Shrimp

I already told you that I am absolutely in love with shrimp.   And, it is about time I made another recipe with them.  I just bought a bag of tasty grapefruits and had an orange and lime on my counter, which inspired this amazing recipe.  I hope you enjoy it as much as I did!

1 Lime

1 Orange

1 Grapefruit

1/4 Cup of White Wine

1 TBSP Chiffonaded Mint

2 Cloves of Garlic, minced

1 Pound medium shrimp, (30-40 per pound), peeled and deveined

Salt to taste

Ingredients for Citrus Shrimp

Combine juice of lime, orange and 1/2 of grapefruit in bowl

Add 1 TSP zest of lime and orange

Add mint

Citrus Marinade

Add shrimp and toss to coat

Cover and refrigerate for 20 minutes, tossing occasionally

Shrimp in marinade

Heat a large skillet and add enough olive oil to coat bottom

Drain shrimp and reserve marinade

Add shrimp to skillet

Cook shrimp about 30 seconds per side (or until barely pink)

Cooking shrimp

Transfer cooked shrimp to plate and add reserved marinade to skillet

Simmer for 5 minutes

Add shrimp back to skillet and salt to taste

Shrimp and Julianned Veggies added to marinade

I added julianned veggies (zucchini, carrots, and squash) to the shrimp and marinade.

Final Triple Citrus Shrimp!

Serve and enjoy!  I think that this triple citrus marinade would also be a great to use with chicken, tilapia, swordfish, flounder, sea bass, and scallops!  Pretty much a white flaky fish and/or chicken.  Give one of these a try and let me know in the comments below or at newforchews@gmail.com how it turns out!

  1. This looks awesome and easy to make. I am a shrimp-seafood nut. I am going to try this. Did you think to add lemon with the lime or you think the lime added enough citrus flavor?

    I was going to use lemon as well, but only went with lime, orange, and grapefruit. You can definitely add lemon juice as well or you can substitute it! Let me know when you make it how it turns out!
