Pesto Tilapia

I haven’t made fish in awhile, so I decided to cook one of my favorite fish recipes, pesto tilapia.  It is a recipe I concocted all by myself, and is a great one if I can say so!  It is a pretty easy recipe, made with store bought pesto and a few other ingredients.  If you get ambitious, you can make your own pesto.  If not, stick to the recipe below!

2 Tilapia Filets

4 TBSP store bought pesto of your choice

2 TBSP Shredded Parmesan Cheese

Spinach, Olives, and Baby Tomatoes to garnish

Avocado-Optional

Preheat oven to 350

Place tilapia filets on oven safe pan sprayed with cooking spray

Combine pesto and cheese in small bowl

Ingredients

Divide in half and spread on top of filets

Pesto layer

Add a layer of spinach on top of pesto

Cut olives and tomatoes in half

Alternate olives and tomatoes on top of spinach

Layers (Spinach didn't get added...sorry, I had a blonde moment!)

Cook in oven for 15 minutes

Final Product!

If adding avocado, add sliced avocado to top

Serve and enjoy!
