I gave you a recipe for a great sandwich (recipe HERE) with beets, but I forgot to tell you how to cook the beets. Don’t buy store bought ones, they just don’t measure up to freshly cooked ones. I thought beets were hard to cook, but they are rather simple. Pretty much just roast them in the oven, peel them with your hands, and enjoy! Follow my recipe for great tasting beets!
Preheat oven to 375
Cut top and bottoms of beets off
Cut larger beets in half
Place in tin foil
Once all of the beets are placed in tin foil, drizzle with olive oil
Close tin foil to make packet
Roast in the oven for 45-60 minutes depending on thickness of beets
Open the tin foil packets and let beets cool
When cool to the touch, lightly coat hands with olive oil and peel beet skin with knife
Don’t be scared, your hands will become beet red, but coating them with olive oil ensures that the color won’t stain your hands.
To enjoy, serve sliced on salads, in sandwiches, or just toss them with a bit of butter and some spices!
