Tuesday’s Tip-Roasted Pumpkin Seeds

For those of you last minute pumpkin carvers, when you take all of the inside out of the pumpkin, don’t throw it away!!!  Rinse the pumpkin seeds under cold water and take out the pulp and strings.  Pat the seeds dry and mix in a bowl with olive oil–amount will depend on quantity of pumpkin seeds.  Use enough olive oil just to coat the seeds, but not drown them.  Once coated lay the seeds on a baking sheet in a single layer and sprinkle with salt.  (If you do not want to use olive oil, you can use cooking spray instead).  Bake in a preheated 325 degree oven for about 25 minutes or until golden brown.  Let cool and enjoy!

    Hi Ashley! I’ve never made pumpkin cookies but I know my mom Stella loves them as much as me. I’ve had your mom’s pumpkin cookies so I know that the recipe on your blog is a winner. I hope I can make them as good as they look in your pic!
