Tuesday’s Tip

No matter how much air I get out of a ziplock bag, my cheese always molds!  Apparently, and according to THIS blog, air is actually GOOD for the cheese since it allows the (living cheese…yes it is a living thing) to breathe.  My mom told me to fold my cheese in wax paper.  Since I have done this, no good clock of cheese has gone uneaten.  If you notice your cheesemonger, they actually wrap their cheese in wax paper as well.  Learn from the best!
